Taste the Rainbow!

Do you remember the Skittles commercial “Taste the Rainbow?” Now I am not saying eating a handful of Skittles a day will boost your immune system but having a diet filled with colorful fruits and veggies can. Fruits such as oranges and strawberries are packed with carotenoids and vitamin C, which can help boost your immune system. Aim for a plate filled with ½ of fruit and veggies at each meal. Try our berry slushy and let us know which fruit you choose.


Very Berry Slushy

Total Time: 5 minutes

Serves: 3

Ingredients

  • 4 ½ cups berries, such as sliced strawberries or blueberries

  • ¼ tbsp honey or maple syrup, more to taste

  • A squeeze of lime, orange or lemon (1 ½ tablespoon)

  • 2 ¾ – 3 cups ice

Instructions

  1. Place strawberries, maple and a squeeze of citrus in a blender. Blend until smooth. If you would like, add a splash of water to the bender to get it going. Add more maple or citrus to taste your taste. This will create a nice between sweet and tart. The sweeter and riper the strawberries are the less maple or honey you will need.

  2. Put ice cubes in a blender to make it slightly smooth or put ice into a zip-lock bag and smash with your foot or heavy object such as a hammer. If you have blender, let it go just a bit it longer, it will take on a slightly creamy look. It should be thick enough to mound on a spoon, and not be runny.

Tips

Spoon into one large glass or two smaller glasses. Use frozen fruit and add orange juice and water to balance out the thickness.


If you’d like a bit of creaminess, add a few spoonfuls of yogurt.
